Feisty Blood Orange and Supergreens Salad

Years ago, when my mother still lived in the States, she used to purchase sparkling Italian blood orange juice. It was tangy and just a little bit spicy. I felt glamorous whenever I drank it.

The Arancia Rossa di Sicilia (Red Orange of Sicily) has protected geographical status in Europe, much like champagne can only be called such if it is actually from the Champagne region of France and how feta is a protected designation of origin (PDO) product of Greece. Needless to say, my father has just about every citrus fruit imaginable in his garden in Greece, he does not have the vibrant-colored blood orange.

It’s currently citrus season in New York, and when I saw blood oranges at the supermarket I scooped them up without hesitation. They bring such exoticism to the table. I decided to make a blood orange with super-greens salad, perfect for revitalizing energy.

Here’s the recipe:::

Wash your favorite greens or a mixture of favorites. I used Organic Girl’s Super Greens, which is a zesty mixture of five different greens:

tangy red & green chard, hearty bok choy, and spicy arugula accented with mild sweet spinach.

Peel as many firm blood oranges as your heart desires. (I used three blood oranges for one 5 ounce container of greens.) With the peel removed, leave the fruit in its ball shape. It’s okay to leave the white pith on it–in fact, it’s actually healthier to do so. Take a sharp knife and cut the blood orange ball into slices.

Next, peel a red onion and cut it into thin slices. Then, gently push the insides of each slice so that it separates into rings.

Toss the blood-slices and the red-onion rings into the super greens. Drizzle with blood-orange olive oil. I used The Filling Station’s Blood Orange Olive Oil, which a friend gave me as a housewarming gift. The oil is warm and soothing, a great complement to the tangy-er and zestier ingredients.

Enjoy! The blood oranges are a delicious source of vitamin C and the greens are excellent sources of vitamin K and vitamin A. The red onion is high in flavonoids. It’s a healthy salad with a beautiful presentation that is sure to impress guests. Invite a starving artist over for dinner!

The Starving Artist Eats Watermelon Feta Salad

Yesterday I shared that summer was all about karpouzi at my house.

The other Sunday, after church, I had my friend Sandra over for brunch and wanted to make something special. I decided to try my hand at a watermelon-feta salad. This isn’t something I ever grew up eating, but when I attended the GABBY Awards a few years ago, one of the passed meze they served at Ellis Island before the ceremony was cubed watermelon with feta speared with a toothpick. Since then I’ve seen delicious recipes for it watermelon and feta salads. I decided to make my own version, topped with an exquisite dark chocolate vinaigrette my friend Rori gave me as a housewarming gift.

  • Cut watermelon into chunks
  • Cut Feta cheese into chunks
  • Mix the watermelon and feta in a bowl and top with pistachio meat (meaning pistachios out of their shell)
  • Drizzle dark chocolate vinegar over the salad
  • Serve!

See how easy that is?! You can prep ahead by cutting the watermelon and the feta into chunks the night before, but I recommend waiting until you’re about to serve guests to mix the ingredients together so that they retain their individual flavors and so the nuts don’t get soggy.

The ingredients are, admittedly, a bit on the pricier side, but when you make it yourself you save a lot of money. Feta Salsa

These days it’s all about eating simply.  Dashing between work and class, there are at least two days a week that I eat all three of my meals on the go.  Class doesn’t let out until 10:30 pm, and if I get out a little early I try to pop in Whole Foods to pick up some food since it’s on my way to the subway.

The other day I was in Whole Foods, picking up an orange, pumpkin muffins with actual pumpkin seeds on the tops (double yum!), and soup mix (cut-up fresh veggies that I actually use for stir-fry not soup), when I saw something new: feta salsa.

I eat a lot of pita and hummus and pita and tabouli.  I haven’t gotten sick of it yet, but the idea of something new to put on my pita got my attention.  Unfortunately, I couldn’t justify the price.  It was about $3 more than the hummus.  That might not sound like a lot, but I could buy three Wet ‘n Wild nail polishes for that price or stamps to mail a handwritten letter to a friend.  So, I was quite thrilled when I stumbled upon this feta salsa recipe from Smitten Kitchen.

I’m figuring I could make a batch of it on a Sunday and eat it all week long for lunch.

Feta is one of those cheeses that I love and that makes me feel homesick/festive (my family always ate it at holidays), but that I never really purchase on my own.  I’m not quite sure why.  Maybe because it’s such a distinctive cheese.  I do enjoy it, though, and this feta salsa recipe is a great way to jazz up my lunches.
